The members of the Cooperative are over three hundred and ninety (they represent almost all of Blera's olive growers), active on approximately 800 hectares for a total of over 40,000 olive trees. Most of the plantings are based on the Caninese cultivar (native variety), with the parallel presence of recent plantings with the Frantoio and Leccino cultivars. On the basis of the quality regulations adopted by the Colli Etruschi Agricultural Cooperative, all the olive groves of the adhering members are subjected to repeated and strict controls at each stage of production.

The harvest, which begins in October and lasts no later than the second week of November, is done by hand picking, divided by single cultivar. The harvested olives are delivered to the pressing plant during the day and pressed, by cultivar line, within twelve hours of delivery.

 

The extraction is obtained by centrifugation with a three-phase Pieralisi plant. The oil obtained from the individual cultivars is stored in stainless steel tanks saturated with inert gas (nitrogen), protected from light and air, in an air-conditioned environment at a constant temperature of 15/17°
