Founded in 1976, the Cooperative C.O.P.A. boasts forty years of experience in the fruit and vegetable sector. From the small reality of Canino, in the province of Viterbo, the cooperative has been expanding year after year, becoming the fulcrum of the entire fruit and vegetable sector of the Tuscan-Lazio Maremma area.
Nationally known for the production of green asparagus, currently the Agricultural Society C.O.P.A. dedicates half of its land to this crop, cultivating in the remaining hectares many other first fruits such as cabbage and cauliflower, artichoke, fennel, melon, watermelon, courgette and tomato for preserves.
In 2017, in full synergy with its members, the first almond trees were planted which will lead to the creation of a real production chain that starts from the design of the plants, from the varietal choice, from the ordering of the seedlings to get to the training and help in the breeding and production pruning, to the technical assistance in the fertilization and in the defense and, finally, to the operations of post-harvest through a processing line.
The cooperative C.O.P.A. has equipped itself with a specific line that includes three processing stages:
- first phase: cleaning the freshly harvested almond from the branches, leaves and other foreign bodies;
-second phase called "smallatura": separation of the almond from the husk;
- third phase: drying of the product.
This last operation leads the almond to have such a humidity that the product can be easily stored for months waiting for the sale in the shell or the subsequent processing (shelling).
A part of the almonds stored and distinguished by variety and quality will be destined for wholesale sale while another part will be shelled for the local market (small confectionery companies, ovens, pastry shops and final consumers).
