The Aquila oil mill located in Pescia Romana, in the province of Viterbo, has continued a family tradition established for three generations since 1972, offering consumers a genuine and quality product.
The olives destined for processing are carefully selected on the basis of quality (state of ripeness, absence of defects, diseases...) and variety, giving preference above all to the Caninese cultivar, a typical variety of Lazio and particularly widespread in the province of Viterbo, and Frantoio cultivar, typical of Tuscany instead.
The harvesting and processing activities start from the month of October and continue until December, influenced by the temperatures and climatic events characteristic of the season.
Frantoio Aquila also processes local olives on behalf of third parties, giving every small producer the possibility of collecting the oil obtained directly from their own olives, enhancing the importance that the tradition of olive growing has maintained in our area for millennia.
