The Il Fiocchino farm has specialized for several generations in sheep breeding.
The environment is the hilly one of the Vulsini Mountains, which surround Lake Bolsena; the pastures are controlled mixed grassland.
The dairy products, pecorino and ricotta, are handcrafted with pressing and salting by hand; they fit into the production range of typical products, respecting the environment, so much so that they are classified as 'shepherd's cheeses'.
The transformation laboratory looks to the past with the adaptation to hygienic-sanitary standards and advanced mechanized techniques compliant with EEC directives
