The Paolocci oil mill, born in the early 1900s as an oil mill at the service of the family farms, is still proposed today as a family-run business, with the aim of promoting and defending the well-known olive-growing tradition of the Vetralla area, in Lazio, in the province of Viterbo, also known as Tuscia, enhancing an exclusively local product that certainly deserves great attention from lovers of typical quality products.
This is why the extra virgin olive oil produced by the Paolocci mill can only be offered in a single form, i.e. as the pure and simple product of pressing local olives, to best represent the typicality of the Lazio area to which it it is intimately connected; therefore, it would not make sense to offer the consumer different oils, with differentiated characteristics according to presumed different aromas or tastes.
This type of approach, which favors the visceral bond between extra virgin olive oil and its land of origin, is totally reflected in the care with which extraction and packaging are carried out.
The result is an oil with peculiar characteristics, of an intense green colour; of good intensity on the nose, it has hints of artichoke and fresh grass, with a very pleasant fruity and vegetable connotation; the taste is intense and persistent, with the right balance between bitter and spicy; in closing it offers a pleasant note of sweet almond.
