The Fanelli pasta factory is located in the heart of the Cimini Mountains, a land of ancient flavours, more exactly in Canepina, a small village where the culinary and artisan traditions of the past are more alive than ever, where the act of cutting and cooking pasta it has become a real art.

In our pasta factory we work only high quality semolina and selected and natural raw materials, mainly coming from the surrounding area. In all our preparations you will not find any trace of preservatives, thickeners, additives or colourings, because we are very keen on safeguarding the genuineness and naturalness of the food.

The production takes place through a manufacturing process that keeps the flavors of the pasta made by our grandmothers unaltered, but at the same time capable of ensuring a very high quality standard.

Stone-ground grains and cereals, grown exclusively in the Tuscia Viterbese by farms that we have personally selected.

Back to the short supply chain: the companies we work with and that we have carefully selected grow according to the organic method exclusively in the Tuscia Viterbese area. In this way you have the opportunity to visit the farm and touch the passion of the farmers who firmly believe in "true" organic farming.

Rediscovering stone grinding: flours are tastier, richer and above all more digestible. It is possible to preserve the germ of the grain and a large part of those nutrients that industrial refining destroys.

Select ancient grains of the highest quality grown by local companies: the Senatore Cappelli durum wheat we use is part of the small family of "NO GMO" grains of Italian origin and represents one of the cereals of international excellence.
